DM 3966: Nutrition Principles (Part I & II)

This course is designed to help you learn the principles of a healthful diet and then put them into practice--for yourself, your family, clients or patients and residents. You will learn how to improve your nutritional health and receive the latest information on food groups, dietary guidelines and labeling.

Part I : Nutrition fundamentals, including macronutrients, energy balance, vitamins, and minerals.

  • Formats: Online, Mail, CD-ROM
  • Number of Lessons: 4
  • CEUs or Clock Hours: 24 (DMA).
  • Textbook: Nix, S. William's Basic Nutrition and Diet Therapy. (2005). 12th ed. St. Louis, MO: Mosby.
      This textbook can be ordered through MBS Direct. Ask for UND Certificate Programs, Nutrition Principles for Dietary Personnel (#DM3966).
  • Fees: $110 fee plus cost of textbook and $15 shipping/handling.

Part II : Nutrition principles through the life cycle including pregnancy, childhood, and adults Pre-requisite: Part I .

  • Formats: Online, Mail, CD-ROM
  • Number of Lessons: 4

How to Register

Registration is easy:

  • Print out and complete the application and submit it by mail or fax.

  • Apply in person at Gustafson Hall on the University of North Dakota campus.

Note: Registration will not be processed until payment is received unless prior arrangements have been made with the Office of Certificate Programs.

** This is one of two courses that can be used to fulfill the core course requirement in the nutrition therapy certificate program.
